Head Chef Sum received the Occupational Qualification Certificate of China: Advanced Skills (Chinese Cuisine Chef) in 2019, and won Bronze awards at the Hong Kong Chef’s Competition in 2018. He also worked with the Fook Lam Mun Group (one Michelin star) for many years. Chef Sum is responsible for preparing the restaurant’s classic dishes, ensuring quality and high standards while bringing in a new combination of cooking skills embodying both traditional and modern styles of Cantonese cuisine.

PIIN is a Wine restaurant born out of a passion for Burgundy wines, by the owners of two of the region’s most impressive domains – Château de Meursault and Château de Marsannay.
The wine programme features more than 2,000 wines and is intended to make Burgundy wines, often considered the most expensive and prestigious in the world, approachable to all.
The impressive wine concept is supported by a menu of elevated Cantonese cuisine by former Fook Lam Moon alumni Chef Sum, intended to be enjoyed in a range of tasting plates with PIIN’s expertly curated wines.
