With his bubbly personality, Jake Mendoza brings out the best of Zambales' hospitality by wearing his heart on his sleeve. With over 7 years of bartending experience, Mendoza developed his talent at renowned bars, including Lily & Bloom and The Old Man, before joining Leading Nation as assistant bar manager, and going on to refine his skills in Martini mixology at Kyle & Bain. With an aptitude for cocktails, his talent was soon recognised when he was named 1st runner-up in the Time Out 2020 Rising Star Bar awards.

Paying homage to ice machine inventors William Kyle & John Bain, John Nugent — Beverage Director of Leading Nations and Head Mixologist, adorns the Ice House concept bar with colonial-inspired creations, offering a neighbourhood gastropub for Martini lovers to call Kyle & Bain their second home.
於十九世紀後期的香港殖民地時代，冰塊是一種奢侈品。 為了應對東南亞潮濕的天氣，巨大的冰塊從新英國結冰的池塘經好望角運到香港，費用龐大。直至兩位企業家和發明家 William Kyle 和 John Bain 生產出第一部製冰機，冰塊便從此成為本地負擔得起的商品。
為了向製冰機的發明家 William Kyle 和 John Bain 致敬，Leading Nations 的飲品總監兼首席調酒師John Nugent特別將殖民時代的創作融入「冰屋」概念的酒吧中，為馬天尼愛好者帶來一個充滿特色鄰里酒吧，並以Kyle & Bain作為他們第二個家。
